Ingredients:
- 3 tbsp olive oil
- 1 lb (0.5kg) Russet baking potatoes
- Salt and pepper
Directions:
- Peel and grate the potatoes.
- Squeeze out as much moisture as you can from the grated potaoes.
- Heat olive oil in a large pan on medium high heat.
- When the oil starts shimmering spread the potatoes along the bottom of the pan and sprinkle with salt and pepper.
- Fry for about 3 minutes or until golden brown then flip all at once with a spatula.
- Fry for about 2 minutes more.
- Place on paper towels to drain the excess oil.
