Pita bread is served at just about every meal in the Middle East. You can use it for dipping or to make sandwiches with it. This is the quick and easy way to make pita bread on a stovepot. You can try baking it in an oven instead, if you’d like them to puff up more.

Ingredients:
2 1/2 cups all-purpose flour
2 tsp salt
2 tsp olive oil
2 tsp instant yeast
1 cup warm water
Directions:
In a large bowl sprinkle the yeast over warm water.
Stir until the yeast dissolves.
Add two cups of flour, one cup at a time, and stir for about one minute in the same direction.
Add the salt and olive oil and knead for about 5 minutes until the dough is smooth and elastic.
Let the dough rest in a clean bowl covered with a dischcloth or a plastic wrap for 1-2 hours.
After it’s rested gently trun the dough on a floured surface. Divide it into 8 equal pieces.
Flatten each piece with a rolling pin into a circle. If the dough starst to stick, sprinkle it with a little extra flour.
Warm a cast iron skillet over medium-high heat.
Lay a rolled-out pita on the skillet and bake for 30 seconds. You’ll see bubbles starting to form.
Flip the pita and cook for another minute on the other side.
