Low-Fat Blueberry Bran Muffins

These muffins are just as delicious as the regular ones (if not even more). Before you know it, you will be licking your plate and searching for crumbs. Healthy and tasty, what more can you ask for?

Ingredients:

  • ½ cup unsweetend apple sauce
  • 1 cup nonfat milk
  • 1 ½ cups wheat bran
  • 2/3 cup brown sugar
  • 1 egg
  • ½ teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup flour
  • ½ cup whole wheat flour
  • 1 cup blueberries

Preparation:

  1. Preheat the oven to 375 degrees. Grease muffin cups. Mix the wheat bran and milk, then let it stand for 10 minutes.
  2. Put the apple sauce, egg, brown sugar, and vanilla into a bowl. Beat in the bran mixture, then sift together both flours, bakinig powder, salt and baking soda. Stir the mixture until just blended. Put the blueberries in, then scoop into muffin cups.
  3. Bake in oven for 20 minutes.
